Grilled Salmon with Fresh Basil, Lemon and Garlic Butter

101_5203There are many evenings my dinners need to be ready in a snap.    And like many who prepare the family meal, sacrificing flavor due to the lack of time is just not an option.  There is nothing worse than sitting down to dinner only to wallow in a sad cloud of taste bud disappointment.  Dinner should tickle the taste buds and warm the heart.  And hopefully put a smile on the face of every member of your family. 

 

Now, it’s not often my children get excited about fish for dinner.  However, I feel lucky both my children like salmon as we live in the Pacific Northwest where salmon abounds and is readily available.  Not only is salmon easy to find, it’s also easy to prepare and one of the healthiest fish to consume. 

 

This grilled salmon recipe is delicious served over a crispy Romaine Caesar Salad.  The perfect spring or summer meal that’s definitely easy, everyday gourmet!

 

Grilled Salmon with Fresh Basil, Lemon and Garlic Butter101_5192

 

¼ cup butter

¼ tsp fresh cracked black pepper

¼ tsp kosher salt

1 garlic clove minced

1 tablespoon lemon juice

1 tsp lemon zest (optional)

1 tablespoon fresh basil, finely chopped

Salt & Pepper

4-6 lemon wedges

1-1 ½ lbs Salmon fillets with skin, about 1 inch think

 

Place the butter, garlic, salt and pepper in a glass measuring cup or bowl and microwave for about 30-45 seconds just until the butter has melted but not clarified.  Once melted, stir the butter and garlic mixture and then add the lemon juice, zest, and basil.

 

Heat the grill on medium (about 400 degrees).  Cut the salmon fillets into 4-6 pieces.  Ladle a teaspoon of butter mixture over each piece of salmon making sure to cover the surface.  Next, sprinkle a pinch of salt and pepper on each piece of salmon. 

 

Place the salmon on the grill skin side down and cook for about 4-5 minutes, or a few minutes longer if you prefer your salmon well done.  Don’t flip your salmon over, the skin acts as a grill plate or aluminum foil, cooking your salmon without burning it. 

 

Once your salmon is done, plate each piece of salmon on a platter and ladle the remaining sauce over the salmon and serve with lemon wedges.

  2. This is a classic PNW dish. We eat it, or a variation of it, monthly at least. It’s a terrific, all-4-seasons recipe; and it’s good cold, too!
