Summer just isn’t summer without Grandma Eilene’s Macaroni Salad. This summer comfort food is the perfect compliment to any grilled dinner or summer picnic. It’s especially yummy with the Grilled Marinated Chicken Burger recipe posted previously in this blog. And the best part, it’s so easy! Simple, delicous and full of flavor, it’ll make your backyard barbeque’s a hit!
Grandma Eilene’s Macaroni Salad
1 lb Elbow Macaroni
1 medium red onion, diced
8-10 large dill pickles, diced
1 cup Miracle Whip (or more if you like)
1 tablespoon Dijon mustard
Salt and Pepper to taste
Prepare macaroni to package directions. Rinse the cooked macaroni under cold water to stop the cooking process. Once the macaroni is cold, add the Miracle Whip salad dressing, Dijon mustard and toss to coat the macaroni. Next, add the diced onion, pickles and season with salt and pepper. Toss and taste for seasoning.
You can serve the Macaroni Salad immediately or refrigerate for 2-3 days.
Option: Add flaked tuna or grilled chicken to leftover macaroni salad for a quick lunch or snack.
***For a wheat free option use an elbow or penne pasta made with corn or quinoa. Cook just a few minutes less than the package recommends so it’ll hold up when dressed in the salad dressing.
